Getting medication prescribed and finding specialists
I am wanting to know how we can ensure we have no problems getting prescriptions for the medicine that both my daughter and partner must take every day. How can we find specialists to monitor their conditions? In New Zealand they see a Pediatrician and Liver specialist.

I would suggest speaking to your current specialists and asking them about medication availability in Australia and to make recommendations of specialists you can see there. It's very likely your current doctors will have colleagues in Australia and they should be willing to write you a referral letter.
