I left Australia 2 yrs ago with credit card debts exceeding $30k, can I enter Australia again? What will happen?
I left Aus with massive debt. Initially revived loads of phone calls emails and letters from collection agencies and such then I stopped hearing from them (maybe because we ignored them?) what happens if I want to go back to Australia for a holiday?

Personally, I wouldn't be going back for a holiday if I was you. That is an extremely high level of debt. I'm really surprised they haven't chased you overseas.

I left New Zealand ten years ago and left a personal loan behind and stopped paying it. What would have happened to that loan?

You can go back into Australia with the sort of debt you have no dramas. I did it recently with a similar debt and got in and out of the country. They only care if it's Government debt not agency debt.
